Creamy Calypso Fruit Soup

Is it a soup? Or, a smoothie? Try this tasty creation made with whole grain brown rice and fresh fruit.

Ingredients:

1 cup River® Whole Grain Brown Rice, cooked and cooled
1 cup pineapple juice
1 cup orange juice
1 ripe banana, mashed
1 can (11 1/2 oz.) mango nectar
2 Tbsps fresh mint leaves, snipped
1 Tbsp lime juice
1/4 cup tropical dried fruit bits
2 Tbsps almonds, sliced
2 Tbsps crystallized ginger bits
flaked coconut
fresh mint sprigs


Directions:

Place the rice and the next 6 ingredients in a blender container.  Blend till smooth.  Stir in the rest of the ingredients; except the flaked coconut and mint sprigs; cover and refrigerate until chilled.  Serve garnished with flaked coconut and mint sprigs
