Middle Eastern Salad

Ingredients:

tomatoes, chopped |

Feta cheese with basil, crumbled |

purple onion, chopped |

red bell pepper, chopped |

yellow bell pepper, chopped. |

green bell pepper, chopped |

parsley, chopped |

black olives, sliced |

red wine vinegar |
| 1 1/2 |

olive oil |
Directions:
Prepare brown rice according to package directions. Combine first nine ingredients (including cooked rice) in a large mixing bowl. Toss gently. In a small container, combine vinegar and oil. Shake to mix. Pour over mixture. Toss and refrigerate.
